Description

Ambrosia Salad is a nostalgic, fruity dessert salad that’s light, sweet, and creamy. Packed with mandarin oranges, pineapple, marshmallows, and coconut, it’s perfect for holidays, potlucks, or a retro-style treat any time!

Ingredients

Scale
  • 1 (15 oz) can mandarin oranges, drained

  • 1 (20 oz) can pineapple tidbits, drained

  • 1½ cups mini marshmallows

  • 1 cup shredded sweetened coconut

  • 1 cup sour cream

  • 1 cup whipped topping (Cool Whip or homemade)

  • ½ cup chopped maraschino cherries, drained and patted dry

  • ½ cup chopped pecans or walnuts (optional)

Instructions

1️⃣ Mix the base: In a large bowl, gently fold together sour cream and whipped topping until well blended.

2️⃣ Add the fruit: Fold in mandarin oranges, pineapple, cherries, marshmallows, and coconut. Stir until everything is coated in the creamy mixture.

3️⃣ Add crunch (optional): Stir in chopped nuts if using.

4️⃣ Chill: Cover and refrigerate for at least 2 hours before serving to let flavors meld and marshmallows soften.

5️⃣ Serve: Spoon into bowls and top with extra cherries or a sprinkle of coconut if desired.

Notes

  • Best made the day before for full flavor.

  • Can substitute Greek yogurt for sour cream for a lighter version.

  • Keeps well in the fridge for up to 3 days.

  • Prep Time: 15 min
