Instructions
Creating Authentic Arabic Chicken and Rice (Kabsa) is a delightful process that anyone can enjoy. Just follow these simple steps:
1. Rinse the Rice: Begin by rinsing the basmati rice under cold water until the water runs clear. This helps remove excess starch and prevents stickiness. Soak the rice in water for about 30 minutes, then drain.
2. Sauté the Onions: In a large heavy pot, heat the vegetable oil over medium heat. Add the chopped onions and sauté until they become translucent, about 5-7 minutes.
3. Add Chicken: Add the chicken pieces into the pot and sear on all sides until golden brown. This will enhance the flavor and add a beautiful color.
4. Incorporate Garlic and Tomatoes: Stir in the minced garlic and diced tomatoes, cooking for another 5 minutes until the tomatoes soften.
5. Add Spices and Liquid: Sprinkle in the Kabsa spice mix, turmeric powder, and season with salt. Add the tomato paste, bay leaf, cardamom pods, cloves, and chicken broth. Bring the mixture to a gentle boil.
6. Simmer the Chicken: Reduce the heat to low, cover the pot, and let it simmer for about 30 minutes or until the chicken is fully cooked and tender. You can also add peas in the last 5 minutes of cooking if desired.
7. Cook the Rice: After the chicken is cooked, remove it from the pot and set it aside. Add the drained rice to the pot and stir to combine. Place the chicken back on top, cover it again, and cook for an additional 20 minutes. The rice should absorb the flavors and become fluffy.
