Caribbean Chicken & Rice: An Incredible One-Pot Flavor Explosion

  • Author: Chef Ethan Sam
  • Total Time: 45 minutes

Ingredients

– 1.5 lbs chicken thighs, boneless and skinless
– 2 cups jasmine rice, rinsed
– 1 medium onion, diced
– 3 cloves garlic, minced
– 1 cup bell pepper, diced (red, yellow, or green)
– 1 can (14 oz) coconut milk
– 2 cups chicken broth
– 1 tablespoon olive oil
– 1 tablespoon soy sauce
– 1 teaspoon ground allspice
– 1 teaspoon paprika
– ½ teaspoon cayenne pepper (optional, for heat)
– 1 teaspoon dried thyme
– 1 bay leaf
– Salt and pepper, to taste
– Lime wedges, for garnish
– Fresh cilantro, for garnish

Instructions

Creating Caribbean Chicken & Rice is effortless if you follow these simple steps:

1. Heat Oil: In a large pot or Dutch oven, heat the olive oil over medium heat.
2. Cook Chicken: Season the chicken thighs with salt and pepper. Add them to the pot and brown on both sides, about 5-7 minutes. Remove the chicken and set aside.
3. Sauté Vegetables: In the same pot, add the diced onion, bell pepper, and garlic. Sauté until softened, about 3-4 minutes.
4. Add Spices: Stir in the paprika, ground allspice, thyme, and cayenne pepper (if using). Cook for another minute until fragrant.
5. Combine Ingredients: Return the browned chicken to the pot. Add the rinsed rice, chicken broth, and coconut milk; stir well to combine.
6. Season: Add the soy sauce and bay leaf. Stir everything together, ensuring the rice is submerged.
7. Simmer: Bring the mixture to a gentle simmer. Reduce the heat to low, cover, and cook for 20 minutes without lifting the lid.
8. Check Doneness: After 20 minutes, check the rice. If needed, cook for an additional 5 minutes. Make sure the rice is tender, and the chicken is cooked through.
9. Rest: Once done, turn off the heat and let it sit covered for another 5 minutes. This helps the flavors meld.
10. Garnish: Fluff the rice with a fork, removing the bay leaf. Serve garnished with lime wedges and fresh cilantro.

With these straightforward steps, you’ll create a delightful dish that reflects the vibrant flavors of the Caribbean!
