– 4 boneless, skinless chicken breasts
– 1 medium eggplant, sliced into rounds

Follow these steps to create your incredible Chicken Sorrentino:

1. Preheat Oven: Set your oven to 375°F (190°C).
2. Prepare Eggplant: Sprinkle salt on the eggplant slices and let them sit for 15 minutes to draw out moisture. Pat them dry with a paper towel.
3. Sauté Eggplant: In a large skillet, heat the olive oil over medium heat. Add the eggplant slices and sauté until golden brown on both sides, about 3-4 minutes per side. Remove from heat and set aside.
4. Season Chicken: Season both sides of the chicken breasts with salt, pepper, and Italian seasoning.
5. Sear Chicken: In the same skillet, add a bit more olive oil if needed. Sear the chicken breasts for about 4-5 minutes on each side until golden brown. They do not need to be fully cooked, as they will finish cooking in the oven.
