These zesty Cilantro Lime Noodles are light, bright, and bursting with flavor. Perfect as a side dish or base for grilled meats, this quick and simple noodle dish brings fresh herbs, tangy lime, and a hint of garlic together in every bite.
Ingredients

8 oz noodles (spaghetti, linguine, or rice noodles work well)

1 tbsp olive oil

2 cloves garlic, minced

1 tbsp butter (optional for richness)

1 lime, juiced and zested

½ cup fresh cilantro, chopped

Salt and pepper, to taste

Optional: red pepper flakes, grated Parmesan, or a splash of soy sauce
Instructions
1️⃣ Cook the noodles: Bring a pot of salted water to a boil. Add noodles and cook according to package instructions until al dente. Drain and set aside.
2️⃣ Sauté garlic: In a large skillet, heat olive oil over medium heat. Add minced garlic and cook for 1–2 minutes until fragrant. Stir in butter if using.
3️⃣ Toss the noodles: Add cooked noodles to the skillet. Toss to coat in the garlic oil.
4️⃣ Add flavor: Stir in lime juice, lime zest, and chopped cilantro. Season with salt and pepper to taste. Add red pepper flakes or a splash of soy sauce if desired.
5️⃣ Serve: Plate immediately and garnish with extra cilantro or lime wedges.
