Creating East African Kuku Paka is simple if you follow these steps:
1. Marinate the Chicken: In a large bowl, combine chicken pieces with lime juice, salt, and half of the curry powder. Let it marinate for at least 30 minutes.
2. Heat Oil: In a large pot, heat the vegetable oil over medium heat.
3. Sauté Onions: Add the chopped onions and sauté until golden brown.
4. Add Garlic and Ginger: Stir in the minced garlic, ginger, and green chilies. Cook for about 2-3 minutes until fragrant.
5. Spice It Up: Add the remaining curry powder, turmeric, cumin, and coriander. Stir for another minute to toast the spices.
6. Cook Chicken: Add the marinated chicken pieces to the pot. Cook until the chicken is browned on all sides.
7. Pour in Coconut Milk: Add the coconut milk and stir well. Bring to a gentle simmer.
8. Add Vegetables (Optional): If using, add the chopped bell pepper and cubed potatoes at this stage.
9. Simmer: Cover the pot and let it simmer for 30-40 minutes, or until the chicken is cooked through and tender.
