Ingredients

4 English muffins, split

4 large eggs

1 cup shredded mozzarella or cheddar cheese

4 slices cooked bacon or sausage crumbles

½ cup diced bell peppers (optional)

¼ cup chopped green onions (optional)

1 tbsp butter or non-stick spray

Salt and pepper to taste

Hot sauce or salsa for serving (optional)
Instructions
1️⃣ Preheat oven:
Preheat to 375°F (190°C). Line a baking sheet with parchment paper.
2️⃣ Prepare English muffins:
Place split English muffins cut side up on the baking sheet. Lightly toast them in the oven for 3–5 minutes while preparing the eggs.
3️⃣ Cook the eggs:
In a skillet, scramble eggs with butter over medium heat until just set but still soft. Season with salt and pepper.
4️⃣ Assemble the pizzas:
Spoon scrambled eggs onto each muffin half. Top with shredded cheese, crumbled bacon or sausage, bell peppers, and green onions.
5️⃣ Bake:
Return to the oven and bake for 5–7 minutes, or until the cheese is melted and bubbly.
6️⃣ Serve:
Serve hot with hot sauce, salsa, or ketchup on the side if desired.
