English Muffin Breakfast Pizza

Description

Toasty English muffins topped with eggs, cheese, and your favorite breakfast toppings — these mini breakfast pizzas are quick, customizable, and perfect for busy mornings or weekend brunch!


Ingredients

  • 4 English muffins, split

  • 4 large eggs

  • 1 cup shredded mozzarella or cheddar cheese

  • 4 slices cooked bacon or sausage crumbles

  • ½ cup diced bell peppers (optional)

  • ¼ cup chopped green onions (optional)

  • 1 tbsp butter or non-stick spray

  • Salt and pepper to taste

  • Hot sauce or salsa for serving (optional)


Instructions

1️⃣ Preheat oven:
Preheat to 375°F (190°C). Line a baking sheet with parchment paper.

2️⃣ Prepare English muffins:
Place split English muffins cut side up on the baking sheet. Lightly toast them in the oven for 3–5 minutes while preparing the eggs.

3️⃣ Cook the eggs:
In a skillet, scramble eggs with butter over medium heat until just set but still soft. Season with salt and pepper.

4️⃣ Assemble the pizzas:
Spoon scrambled eggs onto each muffin half. Top with shredded cheese, crumbled bacon or sausage, bell peppers, and green onions.

5️⃣ Bake:
Return to the oven and bake for 5–7 minutes, or until the cheese is melted and bubbly.

6️⃣ Serve:
Serve hot with hot sauce, salsa, or ketchup on the side if desired.

Notes

  • Use whole eggs, egg whites, or even leftover omelet mix.
