  • Author: Monica
  • Total Time: 30 min

Description

Fresh pineapple slices are dipped in a light batter and fried to golden perfection, then dusted with cinnamon sugar or drizzled with honey. It’s a warm, fruity indulgence that feels like a bite of the tropics.

Ingredients

Scale
  • 1 fresh pineapple, peeled, cored, and cut into ½-inch rings (or use canned rings, drained)

  • 1 cup all-purpose flour

  • 2 tbsp cornstarch

  • 2 tbsp sugar

  • 1 tsp baking powder

  • ½ tsp salt

  • ¾ cup milk (or coconut milk for a tropical twist)

  • 1 egg

  • 1 tsp vanilla extract

  • Vegetable oil, for frying

Optional toppings:

  • Cinnamon sugar

  • Honey or maple syrup

  • Toasted coconut flakes

Instructions

1️⃣ Make the batter: In a bowl, whisk together flour, cornstarch, sugar, baking powder, and salt. In another bowl, whisk milk, egg, and vanilla. Combine wet and dry ingredients to form a smooth batter.

2️⃣ Heat the oil: In a deep skillet or pot, heat 2–3 inches of oil to 350°F (175°C).

3️⃣ Dip and fry: Dip pineapple rings into the batter, allowing excess to drip off. Carefully lower into hot oil and fry 2–3 minutes per side until golden brown.

4️⃣ Drain and serve: Remove with a slotted spoon and drain on paper towels. While warm, sprinkle with cinnamon sugar or drizzle with honey.

Notes

  • Use canned pineapple for convenience, but pat dry before battering.

  • For extra crunch, double-dip the pineapple in batter and fry again briefly.

  • Serve with vanilla ice cream for a next-level dessert.
