Ingredients
-
1 fresh pineapple, peeled, cored, and cut into ½-inch rings (or use canned rings, drained)
-
1 cup all-purpose flour
-
2 tbsp cornstarch
-
2 tbsp sugar
-
1 tsp baking powder
-
½ tsp salt
-
¾ cup milk (or coconut milk for a tropical twist)
-
1 egg
-
1 tsp vanilla extract
-
Vegetable oil, for frying
Optional toppings:
-
Cinnamon sugar
-
Honey or maple syrup
-
Toasted coconut flakes
Instructions
1️⃣ Make the batter: In a bowl, whisk together flour, cornstarch, sugar, baking powder, and salt. In another bowl, whisk milk, egg, and vanilla. Combine wet and dry ingredients to form a smooth batter.
2️⃣ Heat the oil: In a deep skillet or pot, heat 2–3 inches of oil to 350°F (175°C).
3️⃣ Dip and fry: Dip pineapple rings into the batter, allowing excess to drip off. Carefully lower into hot oil and fry 2–3 minutes per side until golden brown.
4️⃣ Drain and serve: Remove with a slotted spoon and drain on paper towels. While warm, sprinkle with cinnamon sugar or drizzle with honey.
Notes
-
Use canned pineapple for convenience, but pat dry before battering.
-
For extra crunch, double-dip the pineapple in batter and fry again briefly.
-
