1. Prepare the Marinade: In a bowl, combine gochujang, soy sauce, honey, sesame oil, minced garlic, grated ginger, and rice vinegar. Mix well until smooth.
2. Marinate the Chicken: Place the chicken thighs in a zip-top bag or a shallow dish. Pour the marinade over the chicken, ensuring it’s well-coated. Seal the bag or cover the dish and refrigerate for at least 30 minutes, or up to 2 hours for maximum flavor.
