Ingredients

1 lb ground turkey

2 medium sweet potatoes, peeled and diced

1 small onion, chopped

2 garlic cloves, minced

1 red bell pepper, diced

1 tbsp olive oil

1 tsp smoked paprika

1 tsp ground cumin

½ tsp chili powder

Salt and pepper to taste

2 cups fresh spinach (optional)

¼ cup fresh cilantro, chopped (optional)
Instructions
1️⃣ Prepare the sweet potatoes: Heat olive oil in a large skillet over medium heat. Add the diced sweet potatoes and cook for about 8-10 minutes, stirring occasionally, until they start to soften.
2️⃣ Cook the aromatics: Add the chopped onion, red bell pepper, and minced garlic to the skillet with the sweet potatoes. Sauté for 3-4 minutes until the vegetables are tender.
3️⃣ Brown the turkey: Push the veggies to the side of the skillet and add the ground turkey. Cook, breaking it apart with a spatula, until no longer pink, about 5-7 minutes.
4️⃣ Season: Sprinkle smoked paprika, cumin, chili powder, salt, and pepper over the mixture. Stir everything together to evenly coat with the spices.
5️⃣ Add spinach (optional): If using spinach, stir it in and cook for an additional 2 minutes until wilted.
6️⃣ Garnish and serve: Remove from heat and sprinkle fresh cilantro on top before serving.
