Hearty Creole Gumbo: An Incredible Ultimate Recipe to Try

  • Author: Chef Ethan Sam
  • Total Time: 1 hour 15 minutes

Ingredients

– 1/2 cup vegetable oil
– 1/2 cup all-purpose flour
– 1 large onion, diced
– 1 green bell pepper, diced
– 2 stalks celery, diced
– 4 cloves garlic, minced
– 1 lb smoked sausage, sliced
– 1 lb chicken thighs, boneless and skinless, cut into bite-sized pieces
– 1 lb shrimp, peeled and deveined
– 6 cups chicken broth
– 2 cups okra, sliced (fresh or frozen)
– 2 bay leaves
– 1 tablespoon Worcestershire sauce
– 1 tablespoon hot sauce (to taste)
– 1 tablespoon Creole seasoning
– Salt and pepper, to taste
– 1/4 cup fresh parsley, chopped (for garnish)
– Cooked rice (for serving)
– Green onions, sliced (for garnish)

Instructions

Follow these steps to create your own Hearty Creole Gumbo:

1. Make the Roux: In a large pot, heat the vegetable oil over medium heat. Gradually whisk in the flour to form a roux. Stir continuously for about 20-25 minutes until it turns a dark brown color (similar to chocolate).

2. Sauté Vegetables: Add the diced onion, bell pepper, and celery to the roux. Cook for about 5-7 minutes until the vegetables soften. Stir in the minced garlic and cook for an additional minute.

3. Add Sausage and Chicken: Incorporate the sliced smoked sausage and bite-sized chicken pieces. Cook for 5-7 minutes until the chicken starts browning.

4. Pour in Broth: Gradually add the chicken broth while stirring. This will prevent lumps from forming.

5. Add Seasonings: Stir in the bay leaves, Worcestershire sauce, hot sauce, Creole seasoning, salt, and pepper. Bring the mixture to a simmer.

6. Cook the Gumbo: Reduce heat to low and let the gumbo cook for about 30-40 minutes. Stir occasionally to prevent sticking.

7. Add Okra and Shrimp: Stir in the okra and shrimp during the last 10-15 minutes of cooking. Ensure that shrimp are cooked through (they’ll turn pink).

8. Adjust Seasoning: Taste and adjust the seasoning as needed. Remove bay leaves before serving.

9. Serve: Ladle the gumbo over a bowl of cooked rice.
