Ingredients

1 lb (450g) whole or halved button or cremini mushrooms

Instructions
1️⃣ Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
2️⃣ In a large bowl, whisk together olive oil, minced garlic, honey, soy sauce, salt, and pepper.
3️⃣ Add the mushrooms to the bowl and toss well to coat evenly.
4️⃣ Spread the mushrooms in a single layer on the prepared baking sheet.
5️⃣ Roast for 20-25 minutes, stirring halfway through, until mushrooms are tender and caramelized.
6️⃣ Remove from oven and garnish with fresh parsley if desired. Serve warm.
