Honey Garlic Butter Roasted Carrots

Description

These roasted carrots are coated in a rich glaze of honey, garlic, and butter, then roasted until beautifully golden and tender. They’re simple to make, naturally sweet, and totally irresistible.


Ingredients

  • 2 lbs carrots, peeled and cut into sticks or left whole if small

  • 3 tbsp unsalted butter, melted

  • 2 tbsp honey

  • 3 garlic cloves, minced

  • 1 tbsp olive oil

  • Salt and black pepper to taste

  • 1 tsp fresh thyme or parsley for garnish (optional)


Instructions

1️⃣ Preheat the oven: Set to 400°F (200°C). Line a baking sheet with parchment or foil.

2️⃣ Make the glaze: In a small bowl, whisk together melted butter, honey, garlic, olive oil, salt, and pepper.

3️⃣ Toss the carrots: Place carrots on the baking sheet and pour the honey garlic butter mixture over them. Toss well to coat.

4️⃣ Roast: Spread carrots out in a single layer. Roast for 25–30 minutes, turning once halfway through, until tender and caramelized at the edges.

 

5️⃣ Garnish and serve: Sprinkle with fresh thyme or parsley before serving, if desired.

Notes

  • Use rainbow carrots for extra color and presentation.

  • Great alongside roast chicken, pork, or holiday meals.

 

  • Drizzle with a touch more honey or a splash of balsamic glaze before serving for extra depth.
