Description
These roasted carrots are coated in a rich glaze of honey, garlic, and butter, then roasted until beautifully golden and tender. They’re simple to make, naturally sweet, and totally irresistible.
Ingredients

2 lbs carrots, peeled and cut into sticks or left whole if small

3 tbsp unsalted butter, melted

2 tbsp honey

3 garlic cloves, minced

1 tbsp olive oil

Salt and black pepper to taste

1 tsp fresh thyme or parsley for garnish (optional)
Instructions
1️⃣ Preheat the oven: Set to 400°F (200°C). Line a baking sheet with parchment or foil.
2️⃣ Make the glaze: In a small bowl, whisk together melted butter, honey, garlic, olive oil, salt, and pepper.
3️⃣ Toss the carrots: Place carrots on the baking sheet and pour the honey garlic butter mixture over them. Toss well to coat.
4️⃣ Roast: Spread carrots out in a single layer. Roast for 25–30 minutes, turning once halfway through, until tender and caramelized at the edges.
5️⃣ Garnish and serve: Sprinkle with fresh thyme or parsley before serving, if desired.
