1. Prepare the Crust: In a mixing bowl, combine the graham cracker crumbs, melted butter, and granulated sugar until well combined. Press the mixture firmly into the bottom of a lined 9×9 inch baking pan.
2. Make the Cheesecake Filling: In a large bowl, beat the softened cream cheese with a handheld mixer until smooth and creamy. Add the powdered sugar and vanilla extract, mixing until fully blended. In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until combined.
