Lemon Raspberry Bars: An Incredible Ultimate Recipe

  • Author: Chef Ethan Sam
  • Total Time: 38 minute

Ingredients

For the crust:
– 1 ¾ cups all-purpose flour
– ½ cup granulated sugar
– ¾ cup unsalted butter, softened
– ¼ teaspoon salt

For the filling:
– 1 cup granulated sugar
– 3 large eggs
– ½ cup freshly squeezed lemon juice
– Zest of 1 large lemon
– ¼ cup all-purpose flour
– 1 cup fresh raspberries

For garnish:
– Powdered sugar (optional)
– Lemon slices (optional)

Instructions

Here’s how to create these incredible Lemon Raspberry Bars:

1. Preheat Oven: Preheat your oven to 350°F (175°C) and line an 8×8 inch baking pan with parchment paper, leaving some overhang for easy removal later.

2. Make the Crust: In a medium bowl, combine the flour, sugar, softened butter, and salt. Mix until the mixture resembles coarse crumbs. Press the mixture into the bottom of the prepared baking pan evenly.

3. Bake the Crust: Place the crust in the preheated oven and bake for about 15-18 minutes, or until lightly golden.

4. Prepare the Filling: While the crust is baking, whisk together the sugar, eggs, lemon juice, and lemon zest in a large bowl. Gradually whisk in the flour until the mixture is smooth.

5. Add Raspberries: Gently fold in the fresh raspberries, being careful not to crush them.

6. Pour Filling Over Crust: Once the crust is done baking, remove it from the oven and immediately pour the lemon-raspberry filling over the crust.

7. Bake Again: Return the pan to the oven and bake for an additional 25-30 minutes, or until the filling is set and the edges are lightly browned.

8. Cool: Remove from the oven and allow the bars to cool in the pan for about an hour. Then, transfer to the refrigerator for at least 30 minutes to chill completely before cutting.

9. Slice and Dust: Once completely cooled, lift the bars out of the pan using the parchment paper. Cut into squares and dust with powdered sugar if desired.

10. Serve: Arrange on a serving platter, and consider adding lemon slices for decoration!
