These crispy zucchini fries are a healthy, low-calorie alternative to traditional fries. Lightly breaded and air-fried to perfection, they’re crunchy on the outside and tender inside—perfect for a guilt-free snack or side dish.
Ingredients

2 medium zucchinis, cut into fry-shaped sticks

½ cup panko breadcrumbs (use whole wheat for extra fiber)

¼ cup grated Parmesan cheese

1 tsp garlic powder

2 large eggs, beaten

Instructions
1️⃣ Preheat your air fryer to 400°F (200°C) for 5 minutes.
2️⃣ In a shallow bowl, combine panko breadcrumbs, Parmesan cheese, garlic powder, paprika, and salt.
3️⃣ Dip zucchini sticks into the beaten eggs, then coat evenly with the breadcrumb mixture.
4️⃣ Arrange the coated zucchini fries in a single layer in the air fryer basket. Spray lightly with cooking spray.
5️⃣ Air fry for 10-12 minutes, shaking the basket halfway through, until fries are golden brown and crispy.
6️⃣ Serve immediately with your favorite dipping sauce.
