1 lb cooked lobster meat (claw, knuckle, and tail)

4 New England–style split-top buns

2–3 tbsp mayonnaise (optional)

Instructions
1️⃣ Prep the lobster: If not pre-chopped, cut the lobster meat into bite-sized chunks. Lightly season with salt, pepper, and a squeeze of lemon juice. Optionally, mix in a tablespoon or two of mayo for a more classic creamy roll.
2️⃣ Toast the buns: Heat a skillet over medium heat. Spread butter on the sides of each split-top bun and toast until golden brown, about 1–2 minutes per side.
3️⃣ Warm or chill the meat: For a warm roll, briefly warm lobster in a skillet with a little butter. For a cold roll, chill the meat and mix with mayo if using.
4️⃣ Assemble the rolls: Fill each toasted bun generously with lobster meat. Top with chives or a small squeeze of lemon, if desired.
5️⃣ Serve: Serve immediately with kettle chips, coleslaw, or pickles on the side.
