Description

A comforting, make-ahead breakfast perfect for lazy mornings or brunch with family. Ripe bananas, warm cinnamon, and a custardy base soak overnight to create a tender, flavorful casserole that bakes to golden perfection.

For the casserole:

  • 1 loaf of French bread (day-old or slightly stale), cut into 1-inch cubes

  • 3 ripe bananas, sliced

  • 6 large eggs

  • 2 ½ cups whole milk

  • ½ cup heavy cream

  • ½ cup brown sugar

  • 1 tsp vanilla extract

  • 1 tsp ground cinnamon

  • ¼ tsp salt

For the topping (optional):

  • ¼ cup all-purpose flour

  • ¼ cup brown sugar

  • ½ tsp cinnamon

  • ¼ cup cold unsalted butter, cubed

  • ¼ cup chopped walnuts or pecans (optional)


Instructions

1️⃣ Prepare the bread base: Grease a 9×13-inch baking dish. Spread half of the bread cubes into the dish. Layer with half of the banana slices. Repeat with the remaining bread and bananas.

2️⃣ Make the custard: In a large bowl, whisk together the eggs, milk, cream, brown sugar, vanilla, cinnamon, and salt until smooth.

3️⃣ Assemble: Pour the custard mixture evenly over the bread and bananas. Press down gently to ensure the bread absorbs the liquid.

4️⃣ Chill overnight: Cover the dish with foil and refrigerate for at least 8 hours or overnight to let the flavors meld and bread soak.

5️⃣ Make the topping (next morning): In a small bowl, mix flour, brown sugar, and cinnamon. Cut in the butter until crumbly. Stir in nuts if using.

6️⃣ Bake: Preheat the oven to 350°F (175°C). Remove the casserole from the fridge and let it sit at room temperature for 20 minutes. Sprinkle the topping evenly over the casserole.

7️⃣ Bake uncovered for 45–50 minutes, or until the top is golden and the custard is set. If the top browns too quickly, tent loosely with foil.

 

8️⃣ Serve warm: Let cool for a few minutes before serving. Drizzle with maple syrup or dust with powdered sugar for extra indulgence

Notes

  • Best made with slightly stale bread—it holds up better during soaking.

  • Add chopped chocolate or a swirl of Nutella for a sweet twist.

 

  • To save time, prepare the topping the night before and refrigerate separately.
