  • Author: Chef Ethan Sam
  • Total Time: 45 minutes

Ingredients

For the crust:
– 1 ½ cups graham cracker crumbs
– ½ cup unsalted butter, melted
– ¼ cup granulated sugar

For the cheesecake layer:
– 16 oz cream cheese, softened
– 1 cup creamy peanut butter
– 1 cup powdered sugar
– 1 tsp vanilla extract
– 2 large eggs

For the topping:
– 1 cup semi-sweet chocolate chips
– ½ cup heavy cream
– ½ cup chopped Reese’s peanut butter cups (optional)

Instructions

Creating these Reese’s Cheesecake Bars is straightforward if you follow these steps:

1. Prepare the Pan: Line an 8×8 inch baking pan with parchment paper, leaving some overhang for easy removal later.
2. Make the Crust: In a medium bowl, mix graham cracker crumbs, melted butter, and granulated sugar until well combined. Press the mixture firmly into the bottom of the prepared pan.
3. Pre-bake the Crust: Preheat your oven to 350°F (175°C). Bake the crust for 10 minutes, then remove it from the oven and let it cool.
4. Prepare the Cheesecake Mixture: In a large bowl, beat the softened cream cheese and peanut butter until smooth and creamy.
5. Add Sugar and Vanilla: Gradually add the powdered sugar and vanilla extract, mixing until fully incorporated.
6. Incorporate Eggs: Add the eggs one at a time, beating well after each addition until the mixture is smooth.
7. Pour Over Crust: Pour the cheesecake mixture over the cooled crust, spreading it evenly.
8. Bake: Return the pan to the oven and bake for 25-30 minutes or until the edges are set and the center is slightly jiggly.
9. Cool and Chill: Allow the bars to cool at room temperature for about 30 minutes, then refrigerate for at least 1 hour to set completely.
10. Prepare the Topping: In a small saucepan, heat the heavy cream until it begins to simmer. Remove from heat and add the chocolate chips, stirring until melted and smooth.
11. Top the Bars: Once the cheesecake is fully chilled, pour the chocolate ganache over the top, spreading it evenly. Sprinkle chopped Reese’s cups on top if desired.
12. Slice and Serve: Once the chocolate has set, use the parchment overhang to lift the bars out of the pan. Cut into squares and enjoy!
