1. Prepare the Marinade: In a bowl, combine soy sauce, honey, hoisin sauce, Chinese five-spice powder, rice vinegar, minced garlic, grated ginger, sesame oil, and red food coloring (if using). Mix well until all ingredients are combined.

2. Marinate the Chicken: Place the chicken thighs in a resealable plastic bag or a shallow dish. Pour the marinade over the chicken, ensuring each piece is well-coated. Seal the bag or cover the dish and refrigerate for at least 2 hours, or overnight for maximum flavor.
