Ingredients
– 1 ½ cups basmati rice
– 1 ½ pounds chicken thighs, boneless and skinless
– 1 large onion, finely chopped
– 3 tablespoons vegetable oil
– 1 teaspoon ground turmeric
– 1 teaspoon ground cinnamon
– ½ teaspoon ground cardamom
– 1 teaspoon salt (adjust to taste)
– ¼ teaspoon black pepper
– 1 tablespoon saffron threads, soaked in 2 tablespoons hot water
– 3 cups chicken broth
– 1 cup slivered almonds or pistachios (optional)
– Fresh parsley, for garnish
– Lemon wedges, for serving
Instructions
Creating Persian-Style Chicken Pilaf is straightforward if you follow these simple steps:
1. Rinse the Rice: Begin by rinsing the basmati rice under cold water until the water runs clear. This removes excess starch and helps achieve fluffy rice.
2. Soak the Rice: Soak the rinsed rice in water for 30 minutes, then drain.
3. Prepare the Chicken: In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and sauté until translucent.
4. Cook the Chicken: Add the chicken thighs to the pot. Season with turmeric, cinnamon, salt, and pepper. Cook until the chicken is browned on all sides, about 5-7 minutes.
5. Add Broth: Pour in the chicken broth and saffron-infused water. Bring to a boil, then reduce heat, cover, and simmer for 20 minutes.
6. Cook the Rice: In a separate pot, bring 4 cups of water to a boil. Add the soaked and drained rice. Cook until the rice is al dente, about 6-8 minutes. Drain the rice and set aside.
7. Layer the Pilaf: Once the chicken is cooked, remove it from the pot and set aside. In the same pot, layer half of the rice, then place the chicken on top, followed by the remaining rice. Drizzle any remaining broth over the top.
8. Steam the Rice: Cover the pot with a lid and cook on low heat for 20-25 minutes until the rice is fully cooked and fluffy.
9. Toast the Nuts: If using, toast the slivered almonds or pistachios in a dry skillet over medium heat until golden.
10. Serve: Fluff the rice with a fork before serving. Garnish with toasted nuts and fresh parsley.
